INGREDIENTS Serves 2
4 Chilli chicken sausages
2 Bagel thins
4 small slices of lemon smoked salmon
4 medium eggs
Handful of fresh, baby spinach
Cook the sausages under a hot grill according to the pack instructions. Meanwhile, bring a pan of water to the boil. Put the eggs in gently and cook for 6 minutes. When the time is up , empty the water out of the pan and cover the eggs with cold water. This will stop them from cooking more. Toast the bagel. Take the shell off the eggs. Put the sausages on the plate and arrange the bagel with the salmon on top and then put the eggs on,cutting them in half. Sprinkle with the spinach. Delicious !
