Makes 4
125g self raising flour
150 ml milk
1 medium egg
I don't add sugar to the mix as toppings usually make them sweet enough. It also means the mix can be used for savoury pancakes as well. (They can also be made ahead and frozen. Make sure they are defrosted thoroughly before eating.)
Add the wet ingredients to the dry and whisk until smooth.
Spray a frying pan with cooking oil and heat it up for a few seconds. Add a dollop of the pancake mix and cook for about 30 seconds on each side or until it starts to colour and is cooked through. Repeat with the rest of the mixture and serve with whatever you fancy !
