1 brown onion
2 tsp coconut oil
500g frozen butternut squash ( If you are planning to freeze the soup, use fresh butternut squash.)
700ml vegetable stock
2 tbsp half fat creme fraiche ( Omit this if catering for vegans.)
Cook the onion in the coconut oil until it softens. Add a 500 g bag of frozen butternut squash. Give it a stir and then add the vegetable stock. Cook for 15 minutes or until the squash is cooked through. Season with salt and pepper if you want to and stir through the creme fraiche. ( Omit this is catering for vegans). Sprinkle with chopped coriander.
