INGREDIENTS Serves 2
200 g pouch of Udon noodles
1 can of tuna
3 tbsp red pesto
50 g grated mature cheddar
Cook the Udon noodles according to the pack instructions. Drain the tuna and mix with the red pesto. Drain the noodles and add the cheddar. Stir in the tuna and pesto.
Serve with veggies or a salad. I used the rest of my coleslaw that I previously made and some raw red bell pepper.
