INGREDIENTS Serves 4
( SW 7 syns per portion using mozzarella from Hea )
175 g ciabatta bread flour ( from a 500 g pack )
125 ml lukewarm water
200 g cows milk mozzarella
1 tbsp olive oil
2 handfuls fresh basil leaves
250 g pack of vine ripened tomatoes
Add the water to the ciabatta flour and stir to form a dough. Knead it for about 5 minutes and then form into a ball and leave in a warm place, covered with a tea towel for about 15 minutes. Meanwhile make the basil oil by adding all but 12 leaves,( for the garnish),to a pestle and mortar with the olive oil and crushing them into a smooth paste. Divide the dough into 4 equal pieces and roll out. (Using a little extra flour if needed). Spread the basil oil over the pizza bases. Slice the tomatoes and add these on top , finishing with slices of mozzarella. Cook in the middle of a preheated oven (210 c fan), for about 12 minutes , or until the base is crisp and the cheese melted. Garnish with basil leaves and serve with a salad of lettuce,cucumber,red onion and beetroot.
