INGREDIENTS Serves 4 ( SW 9 syns per portion )
4 tortillas
3 chicken breasts
150 g mushrooms
2 tsp each of dried oregano,thyme and smoked paprika
1 large jar of tomato salsa (about 500 g)
4 tbsp sour cream
A large handful of grated cheddar cheese
Wipe the mushrooms and slice. Cut the chicken into small chunks. Cook both mushrooms and chicken in a little cooking spray or oil for a few minutes. Add the herbs and spices and continue to cook until the chicken is almost cooked. Stir through about a third of the salsa. Spoon equal amounts into the four tortillas and roll them up. Grease a baking dish with a little cooking spray and place the filled tortillas side by side in the dish. Cover with the remaining salsa,sour cream and grated cheddar. Cook for 20 minutes at 190 degrees. Serve with green veg or a salad.
