Plum banana and oat pancakes.

INGREDIENTS Serves 4

(1 syn SW +heb)


2 tsp coconut oil

160 g oats

120 ml milk

2 eggs

6 small ripe plums

1 ripe banana


Chop the plums,(removing the stone) and banana. Blend all the ingredients apart from the coconut oil, with a stick blender. Add half a tsp of coconut oil to a non stick frying pan and heat until it's melted. Add four separate spoonfuls of pancake mix. Cook for a minute or so each side. Repeat another three times with the remaining oil and pancake mix. Serve with fresh strawberries and fat free natural yogurt.
