Fresh basil pesto.


INGREDIENTS Serves 4


1 pot of living,fresh basil

1 small garlic clove

1 tbsp pine nuts

1 tbsp grated parmesan or vegan alternative

4 tbsp extra virgin olive oil

Juice of 1 lemon

pinch of salt


Tear off all the leaves of the basil plant and swill them with water. Pat dry with a clean tea towel or kitchen roll. Peel the garlic clove. Place the pine nuts in a frying pan and heat for a couple of minutes until they start going a bit golden. Crush the basil,garlic and pine nuts in a pestle and mortar, gradually adding in the olive oil, parmesan and lemon juice. Add a pinch of salt if required.


Serving suggestion - Stir through cooked pasta and serve with a fresh salad.
