INGREDIENTS Serves up to 4
4 eggs
50 g feta
30 g grated cheddar
1 large roasted red pepper from a jar, chopped
A few florets of broccoli
Wash the broccoli a slice into small pieces. Place in a microwavable dish adding a little water to half cover the broccoli. Microwave on full power for 5 minutes. Remove from the microwave and drain. Turn on the grill to maximum and heat while preparing the frittata.
Heat a frying pan and beat the eggs together. Add the eggs to the pan and crumble on the feta. Add the chopped peppers and broccoli and sprinkle over the cheddar. Cook for a few minutes and then place under the hot grill to finish cooking the top. This will only take a couple of minutes. High in protein and delicious !
