Mixed cabbage coleslaw with sweet chilli and mustard



INGREDIENTS


100 g white cabbage

100 g red cabbage

4 spring onions

A few strips of raw courgette


For the sauce


2 to 3 heaped dsp of mayonnaise light

2 tsp wholegrain mustard

3 dsp sweet chilli sauce

A pinch of salt


Mix the sauce ingredients together in a bowl. Grate everything but the courgette ,(which can be done with a vegetable peeler), in a food processor. Combine with the sauce and serve.
