INGREDIENTS Makes 4 large pizza bases or 8 small ones. ( My pic was a small one)
850 g plain flour
1 tsp salt
500 ml warm water
2 tbsp olive oil
14 g instant yeast
TOPPING
4 dsp of tomato and mascarpone sauce. ( I bought a tub and used some of it. )
4 Chopped yellow peppers
4 handfuls of baby spinach leaves
A few tsp of ricotta cheese
4 good handfuls of grated cheddar cheese
200 g wafer thin ham slices, chopped
Combine the dry ingredients and then add the wet. Form into a dough and knead for about 10 minutes. Add flour to the work surface if the dough is too sticky. When the kneading is done, place in a clean bowl that has been wiped with a little oil. Leave it in a warm place and cover with a clean tea towel. It will double in size in about half an hour but I left mine for longer as I wasn't ready to use it and it was absolutely fine.
If you want large pizzas, divide the ball of dough into four. For small pizzas ( like in my picture above), divide them in half again.
I made three large pizzas, one small and put the rest of dough in the freezer. When you have rolled out the dough,lightly grease a baking tray with butter. Place the dough on the tray BEFORE you add the toppings. Spread the tomato and mascarpone sauce on the pizza base and add the rest of the toppings. Feel free to add more or less of everything depending on what you fancy !
Cook at 200 c or 180 c fan for 15 minutes or until the base is cooked.
