Creamy Horseradish and Salmon Burgers with Charred Veg and a Feta and Walnut Salad.

INGREDIENTS Serves 4

Per burger 489 kcal 44.1 g carbs 19.8 g fat 32.3g protein


400 g skinless salmon side fillet

1 tbsp creamed horseradish

A handful of chopped, fresh dill

2 tbsp light mayonnaise

Grated zest of 1 lemon

4 large seeded burger buns



Put all the ingredients in a food processor and mix. Form into 4 equal burgers. Use a little flour to help if the mixture is too sticky. Chill until you are ready to use them.

Cook under a moderately hot grill, turning half way through cooking. This should take about 15 minutes or until the salmon is cooked through.

Thread some vegetables on a skewer and grill at the same time as the burgers. Serve with a salad of watercress, apple,walnuts and feta.
