Even if the meatballs aren't prepared ahead, this recipe is so quick and easy I want to share it with you !
INGREDIENTS Makes 32 meatballs
I used 16 for this recipe that served four of us.
166 kcal 10.7 g protein 15.4 g carbs 6.2 g fat per serving
For the meatballs
500 g 10% fat lamb, carrot and onion mince
1 tsp garam masala
For the sauce
1 400 g can chopped tomatoes
1 onion
2 tbsp tomato puree
Half a veg stock cubed
100 ml hot water
3 cloves
4 cardamon pods, slightly crushed
1 tbsp half fat creme fraiche
200 g dried wholewheat spaghetti
Mix the lamb mince with the garam masala and shape into 32 balls. (If the meat hasn't been previously frozen, they can be frozen at this stage.)
Chop the onion and put in a cooking pot. Spray on some cooking spray and cook for a few minutes until the onions soften. Mix the vegetable stock cube with the water and add to the onion, along with the chopped tomatoes,cardamon pods and cloves. Simmer for a few minutes. ( Remove the cloves and cardamon pods before serving.) Stir in the creme fraiche. Dry fry the meatballs in a non stick pan until they are cooked through and add them to the sauce. Cook the spaghetti according to the pack instructions. Drain and add to the meatball sauce and give it a good stir. Serve with vegetables or a salad.
