Creamy king prawn dahl.

INGREDIENTS Serves 4

1 tbsp coconut oil

1 brown onion

1 tbsp ginger/garlic paste

2 heaped tsp garam masala

1 heaped tsp turmeric

Half a tsp of madras powder

160 g split red lentils

400 ml vegetable stock

400 ml tin of coconut milk light

340 g large,raw king prawns

Handful of fresh chopped coriander


Peel and chop the onion into small pieces. Melt the coconut oil in a large pot and add the onion. Cook it for a few minutes until it starts to soften. Add the garlic/ginger paste and the spices and cook for a few minutes more ,stirring it to stop it from sticking. Add the lentils and keep stirring to coat them with the spices. Add the coconut milk and vegetable stock and simmer for 15 minutes. Add the raw prawns and cook for a few minutes more until they are cooked and turn pink. Stir through the fresh coriander and enjoy served with rice, naan bread or both !!
