Smoked salmon, egg and red pepper brunch.


INGREDIENTS Serves 2


4 eggs

Handful of grated cheddar

Half a red pepper

1 spring onion

splash of olive oil

A few pieces of smoked salmon


Heat the oil in a frying pan. Peel the outer layer off the spring onion. Chop each end off as well and discard. Chop up the red pepper, (discarding the seeds), along with the spring onion and cook for a few minutes in the oil to soften. Beat the eggs together and add them to the pan. Make sure they are cooked through and then serve with the smoked salmon and grated cheese on top.
