Salmon with black bean sauce.

Simple and delicious !

INGREDIENTS SERVES 4

(SW free)


1 tsp ginger/garlic paste

2 tbsp mirin

2 tbsp dark soy sauce

65 ml oyster sauce

400 g can of black beans

half a side of salmon fillet , skin removed


Mix the garlic/ginger paste, mirin, dark soy and oyster sauce together. Open the black beans, drain and slightly crush them with a potato masher. Place the salmon in an oven proof dish and pour over the sauce and black beans. Give it a mix round so all the salmon in coated. Cover the dish with foil and cook in a pre heated oven at 180 c fan for 25 minutes or until the salmon is cooked through. Serve with new potatoes and broccoli or feel free to use rice, noodles or whatever takes your fancy !
