INGREDIENTS SERVES 4
250 g packet of ready cooked red and white quinoa
225 g block of halloumi
A small bunch of spring onions
1 tbsp garlic/ginger paste
1 tbsp olive oil
1 beef tomato
Half a cucumber
1 orange pepper
Half a bunch each of fresh dill and fresh mint
Chop the tomatoes and cucumber into chunks, put in a large bowl and sprinkle with a little salt. Leave for about half an hour.
Chop the spring onion and pepper into small pieces. Add the olive oil to a frying pan and heat. Add the onions and peppers along with the garlic/ginger paste.
Cook for a few minutes until softened. Chop the halloumi into 1 inch size pieces. Add to the pan and cook until golden on each side.
Drain the tomato and cucumber and add to the pan along with the quinoa. Give it a good stir. Finely chop the herbs and sprinkle over the top.
Serve with fresh corn cobs. Delicious !!!
