INGREDIENTS Serves 4

250 g salmon fillet, skin removed
3 tbsp oyster sauce
1 tbsp light soy sauce
Half a tbsp dark soy sauce
Juice of one lime
Mix the oyster sauce and soy sauces together. Put the salmon in a baking dish and pour over the salmon making sure it's all coated properly. Leave, covered in the fridge until needed. Before cooking , pour over the lime juice. Cook at 180 c fan for 15-20 minutes or until cooked through. Serve with hassleback potatoes and veg/salad.
For the hassleback potatoes
Scrub as many potatoes as you need,leaving the skins on. Cut them finely without going right down to the bottom of the potato. (You can put them on a wooden spoon to help balance them as you do this ! ). Spray with cooking spray and cook at 180 c fan for about 45 minutes or until tender.
